Brownie pie combines a flaky pie crust with a gooey, chocolaty brownie filling—need I say more?
It’s easy to make and guaranteed to satisfy your sweet tooth. Use a homemade or store-bought pie crust—either way, it’ll taste amazing.
The key to a perfectly baked crust is blind baking it first; otherwise, the bottom will be undercooked and soggy.
Serve this dessert warm, and for an extra treat, top it with ice cream or whipped cream.
1 Pie Crust (homemade or store bought)
1 cup Granulated Sugar
1/2 cup Unsalted Butter (melted)
3 Eggs
1/2 cup All-purpose Flour
1/4 cup Cocoa Powder
2/3 cup Dark Chocolate Bar (chopped)
2 teaspoons Icing Sugar
Preheat oven to 350°F and line a 9-inch pie tin with the pie crust.
Crimp the edges with a fork or use your fingers to flute the edges. Chill the pie dough in the refrigerator for at least 30 minutes.
Line the chilled pie crust with parchment paper. Fill with pie weights or rice. Bake in the oven for about 10 minutes. Take out of the oven, remove the parchment paper and pie weights. Bake for another 5 minutes. Set aside to cool down.
In a large bowl, whisk together melted butter, sugar and eggs.
Sift the flour and cocoa powder into the bowl. Whisk until fully combined.
Mix in the chopped chocolate. Pour batter into the pie crust.
Bake in the oven for 30-40 minutes.
Remove pie from the oven. Cool for 20 minutes before slicing, top with icing sugar and enjoy!
