This Cherry & Halloumi Salad is perfect for hot summer days, featuring a delightful mix of seasonal ingredients.
Bursting with flavor and texture, it captures the essence of summer with juicy cherries, charred corn, peppery arugula, and grilled halloumi cheese. The sweet cherries blend beautifully with smoky corn, while the arugula adds a refreshing crispness.
Topped with grilled halloumi and dressed in a tangy orange vinaigrette, this vibrant salad is a true celebration of summer’s bounty.
Salad
1 cup fresh cherries, pitted and halved
1 cup charred corn kernels (you can char the corn on a grill or stovetop)
4 cups arugula
220 grams halloumi cheese, sliced
Orange Vinaigrette:
Juice of 1 orange (medium)
Juice of 1/2 lemon
2 tablespoons olive oil
1/2 shallot (diced)
Salt and pepper to taste
In a small bowl, whisk together the orange juice, lemon juice, olive oil, shallot, salt, and pepper to make the vinaigrette. Set aside.
Heat a grill pan or skillet over medium-high heat. Brush the halloumi slices with olive oil. Grill the halloumi slices for about 2 minutes on each side, or until char marks appear. Remove from heat and set aside.
On a serving platter, arrange the arugula, charred corn kernels, cherries and halloumi slices.
Pour the orange vinaigrette over the salad ingredients and toss gently to coat.
Serve immediately and enjoy!
