Ingredients

  • 240 grams all-purpose flour

  • 13 grams sugar

  • 1/2 teaspoon salt

  • 6 grams active dry yeast

  • 2 large eggs

  • 37 ml milk, warm

  • 150 grams unsalted butter, softened

  • Zest of one orange

  • 1/2 teaspoon ground cardamom

  • 100 grams halva, cut into pieces

  • 1 cup fresh blueberries

  • 1 egg for egg wash

  • Icing sugar for dusting

Instructions

  1. In a small bowl, add the warm milk and sprinkle the yeast on top. Let sit for about 10 minutes.

  2. In a bowl of a stand mixer, whisk together the flour, sugar, salt, cardamom, and orange zest.

  3. Add the yeast mixture and eggs to the bowl. Use a dough hook attachment and knead for about five minutes or until a dough forms.

  4. Add the softened butter, gradually while kneading. Knead until the dough becomes smooth and elastic.

  5. Cover the bowl with a damp cloth and let the dough rise in a warm place for about 1 hour or until it doubles in size.

  6. Once the dough has risen, punch it down and divide it into 6 equal portions.

  7. Line a baking sheet with parchment paper. Shape each portion into a smooth ball and place them on the prepared baking sheet.

  8. Cover with a cloth and let them proof for an additional 30 minutes.

  9. Preheat the oven to 375°F (190°C).

  10. After the second proof, use your finger to press down the middle of each bun, creating a well.

  11. Place a small piece of halva and a few blueberries into the well of each bun.

  12. In a small bowl, beat one egg and brush the tops of each bun with the egg wash.

  13. Bake in the preheated oven for 15-20 minutes or until the buns are golden brown.

  14. Once the buns are done, remove them from the oven and let them cool on a wire rack.
