These Halva & Blueberry Brioche Buns offer a delightful blend of textures and flavors. The brioche is pillowy soft inside with a golden crust, creating a satisfying contrast. 240 grams all-purpose flour
13 grams sugar
1/2 teaspoon salt
6 grams active dry yeast
2 large eggs
37 ml milk, warm
150 grams unsalted butter, softened
Zest of one orange
1/2 teaspoon ground cardamom
100 grams halva, cut into pieces
1 cup fresh blueberries
1 egg for egg wash
Icing sugar for dusting
In a small bowl, add the warm milk and sprinkle the yeast on top. Let sit for about 10 minutes.
In a bowl of a stand mixer, whisk together the flour, sugar, salt, cardamom, and orange zest.
Add the yeast mixture and eggs to the bowl. Use a dough hook attachment and knead for about five minutes or until a dough forms.
Add the softened butter, gradually while kneading. Knead until the dough becomes smooth and elastic.
Cover the bowl with a damp cloth and let the dough rise in a warm place for about 1 hour or until it doubles in size.
Once the dough has risen, punch it down and divide it into 6 equal portions.
Line a baking sheet with parchment paper. Shape each portion into a smooth ball and place them on the prepared baking sheet.
Cover with a cloth and let them proof for an additional 30 minutes.
Preheat the oven to 375°F (190°C).
After the second proof, use your finger to press down the middle of each bun, creating a well.
Place a small piece of halva and a few blueberries into the well of each bun.
In a small bowl, beat one egg and brush the tops of each bun with the egg wash.
Bake in the preheated oven for 15-20 minutes or until the buns are golden brown.
Once the buns are done, remove them from the oven and let them cool on a wire rack.
Dust the buns with icing sugar before serving and enjoy! نوش جان
