These Hazelnut Croissants are a delicious twist on the classic almond version, filled with a rich, nutty hazelnut paste. Made with pre-made croissants, they’re easy to prepare and highlight the sweet, toasty flavor of hazelnuts. Perfect for breakfast or brunch, and—if you ask me—even better than almond croissants.
3/4 cup (50g) hazelnut flour
1/3 cup (50g) granulated sugar
6 tablespoons (85g) unsalted butter, softened
1 egg
1/2 teaspoon vanilla extract
pinch of salt
5 croissants
1/4 cup simple syrup
1/4 cup chopped hazelnut
1/2 tablespoon Icing sugar
Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
In a medium bowl, add the hazelnut flour, sugar, butter, egg, vanilla and salt. Whisk until well combined.
Slice the croissants in half lengthwise. Brush each side with simple syrup.
Spread a generous amount of the hazelnut filling onto the bottom half of each croissant.
Place the top half of the croissant back on top of the filling and gently press down.
Place about 1 tablespoon of the hazelnut mixture on top. Sprinkle with chopped hazelnut.
Place the filled croissants onto a baking sheet and bake for 12-15 minutes, or until the filling is lightly golden brown and the croissants are warmed through.
Remove from the oven and allow to cool slightly before serving.
Sift the icing sugar on top and enjoy!
