1 cup labneh
3-4 dried Persian shallots sliced
2 tablespoons Aleppo pepper
2 tablespoons za'atar

Place the dried shallots in a bowl and cover them with water. Let them soak overnight or for at least 8 hours. Once they are rehydrated, drain them and finely chop.
In a mixing bowl, combine the labneh and Persian shallots. Mix well until everything is evenly incorporated.
Divide the labneh mixture into 9 small portions, shaping each into small balls, around 1 inch in diameter.
Roll 3 of the labneh balls in Aleppo pepper until coated, another 3 in za'atar and the remaining 3 labneh balls in everything bagel seasoning.
Place the labneh balls in a jar and cover with olive oil.
Refrigerate for up to one week.
