Clafoutis is a classic French dessert made with fresh fruit and a simple custard batter. Traditionally, cherries are used, but I’ve swapped them for raspberries to add a tart twist. Pistachios also make an appearance here, adding a bit of crunch to the dish.
Clafoutis is probably one of the easiest desserts you can make at home. You can adapt this recipe using almost any fruit you have on hand—blueberries, peaches, or apricots would all be delicious alternatives.
Serve the clafoutis warm with a scoop of ice cream, a dollop of freshly whipped cream, or simply dusted with icing sugar.
Ingredients:
1 tsp Unsalted butter
3 eggs
1/2 cup Granulated sugar
3/4 cup Milk
1/4 cup Heavy cream
1 teaspoon Vanila extract
1/2 cup All-purpose flour
1/4 teaspoon Salt
2 cups Raspberries
1/8 cup Pistachio (chopped)
Icing sugar for dusting
Mint leaves for garnish (optional)
Preheat the oven to 375°F and butter a 9-inch baking dish.
In a large bowl, whisk the eggs and sugar together until fully combined.
Whisk in the milk, heavy cream and vanilla extract. Add flour and salt, whisk for another 2 minutes until everything mixed well.
Place the raspberries on the baking dish and pour the batter over the raspberries.
Sprinkle the top with pistachio. Bake in the oven for 40 minutes or until the clafoutis is set and golden.
Let cool slightly. Dust with icing sugar and garnish with mint leaves if using.
